Whip up this incredibly simple and speedy egg bread in just minutes, perfect for when the kids are on their way home from school! Main Ingredients- 6 large eggs
- 1.5 cups pancake mix (1 cup = 200ml)
- 1 cup milk (200ml)

Cooking Instructions
Step 1
Gather all your ingredients to make these delightful egg breads. You can skip the salt and pepper if you prefer.

Step 2
In a sufficiently large bowl, combine 1.5 cups of pancake mix, 1 cup of milk, a pinch of salt, and a dash of pepper. Whisk gently with a whisk or spatula until just combined and smooth. Avoid overmixing, as this can make the batter tough. Mix only until no dry lumps of pancake mix remain.

Step 3
Pour about one-third of the batter into microwave-safe paper cups. Be careful not to fill the cups more than one-third full, as the batter will expand when cooked and might overflow.

Step 4
Carefully crack one egg into each cup filled with batter. Gently pierce the yolk of each egg with a fork. This is crucial to prevent the yolk from exploding inside the microwave, which could create a mess.

Step 5
Sprinkle some parsley flakes over the top of each egg for a lovely garnish. Now, microwave them in 2-minute intervals, for a total of three 2-minute bursts. Cooking in shorter intervals prevents the egg from exploding. Check on them between each interval. (The total cooking time should be around 6 minutes, but adjust based on your microwave’s power.)
