For the Grilled Eggplant & Tofu

  • 175g firm tofu
  • 1/3 eggplant
  • Olive oil, as needed
  • Salt, to taste
  • Black pepper, to taste

For the Chive Sauce

  • A handful of fresh chives
  • 2 Tbsp soy sauce
  • 1 tsp minced garlic
  • 1 tsp red pepper flakes (gochugaru)
  • Black pepper, to taste
  • 1 tsp oligosaccharide (or corn syrup)
  • A dash of sesame oil
  • Toasted sesame seeds, for garnish

Cooking Instructions

Step 1

First, let’s pat the tofu dry to remove excess moisture. Place kitchen towels on top of the tofu and press gently. This will help achieve a better texture when grilling.

Cut the tofu into 6 equal pieces, about 1.5 cm thick. Season both sides lightly with salt and pepper. This initial seasoning will ensure the tofu is flavorful on the inside.

Trim the ends off the eggplant and slice it thinly, about 0.5 cm thick. Slicing them thinly is key for even cooking and to bring out their natural sweetness.

Heat a pan over medium-low heat with a little olive oil. Grill the eggplant slices until they are golden brown and slightly softened on both sides. This process enhances their sweet flavor and tender texture.

Once grilled, fold or cut the eggplant slices in half. This makes them easier to handle and helps them absorb the sauce beautifully.
