Main Ingredients- 1kg Pork Ribs
- 1 handful Whole Garlic Cloves
- 1 stalk Green Onion
- Pinch of Black Pepper
- 1 Tbsp Ginger Wine (or Mirin)
- Pinch of Coarse Salt
- 1 Tbsp Mirin (or Cheongju)
Rib Marinade- 1 Tbsp Sugar
- 2 Tbsp Soy Sauce
- 1 Tbsp Mirin (or Cheongju)
BBQ Glaze- 2 Tbsp Sugar
- 2 Tbsp Soy Sauce
- 1 Tbsp Mirin (or Cheongju)
- 1 tsp Minced Garlic
- 1 Tbsp Sugar
- 2 Tbsp Soy Sauce
- 1 Tbsp Mirin (or Cheongju)
BBQ Glaze- 2 Tbsp Sugar
- 2 Tbsp Soy Sauce
- 1 Tbsp Mirin (or Cheongju)
- 1 tsp Minced Garlic
Cooking Instructions
Step 1
Carefully cut between the bones of the pork ribs. This helps the marinade penetrate better and ensures a nice shape when cooked.
Step 2
Soak the prepared ribs in cold water for 1 hour to remove any blood. This step is crucial for a clean flavor.
Step 3
Bring a pot of water to a rolling boil. We will add the ribs to this boiling water.

Once the water is boiling, add the pork ribs, whole garlic cloves, green onion, black pepper, ginger wine, coarse salt, and 1 Tbsp of mirin. Simmer vigorously for 20 minutes. Skim off any impurities that rise to the surface during cooking. This process tenderizes the meat and removes any gamey odors.

After boiling for 20 minutes, remove the ribs and rinse them quickly under cold running water. This helps to seal in the juices and maintain a firm texture.

Now, let’s prepare the delicious BBQ glaze. In a small bowl, combine 2 Tbsp sugar, 2 Tbsp soy sauce, 1 Tbsp mirin, and 1 tsp minced garlic. Mix well.

Arrange the marinated ribs on a baking sheet. Pat them dry with a paper towel, then lightly coat the surface with cooking oil. This oil coating will help them achieve a crispier texture in the oven.

Preheat your oven to 250°C (480°F). Place the ribs in the preheated oven and bake for 10 minutes to start the cooking process.
