Main Ingredients

  • 1 bag fresh perilla shoots (approx. 200-250g)
  • 1/2 medium onion
  • 1 red chili pepper

Seasoning Ingredients

  • 2 Tbsp anchovy sauce (fish sauce) (can substitute with soy sauce or tuna extract)
  • 3 Tbsp soy sauce
  • 2 Tbsp raw sugar or regular sugar (adjust to taste)
  • 1 Tbsp minced garlic
  • 100ml water
  • 1 Tbsp cooking oil
  • 1 Tbsp chili powder (for color and a hint of spice)
  • 1.5 Tbsp sesame oil
  • A pinch of sesame seeds (for garnish)

Cooking Instructions

First, rinse the perilla shoots thoroughly under running water to remove any dirt or debris, then gently pat them dry. Peel the onion and slice it thinly into strips. Remove the seeds from the red chili pepper and slice it thinly as well for color. Mince the garlic finely.

Now, let’s make the essential seasoning for your delicious steamed perilla leaves. In a bowl, combine the anchovy sauce, soy sauce, raw sugar (or regular sugar), minced garlic, and 100ml of water. Stir well until all ingredients are combined. Once the seasoning is ready, heat 1 Tbsp of cooking oil in a pan over low heat. Add the sliced onions and sauté until they become translucent and fragrant.

Once the onions are lightly sautéed, add about one-third of the prepared perilla shoots to the pan. Increase the heat to medium-high and stir-fry for 1-2 minutes until the perilla leaves wilt and become tender.

As the perilla leaves cook down and flatten, add the remaining perilla shoots in two more additions. Try to layer them without overlapping too much if possible. Once all the perilla leaves are in the pan, reduce the heat to low.

While keeping the heat low to prevent burning, evenly pour the prepared seasoning over the perilla leaves. Gently toss and mix the perilla shoots, sautéed onions, and seasoning using chopsticks or a spatula. Continue to cook for another 2-3 minutes, ensuring the leaves are fully wilted and the seasoning is evenly distributed.
