Rinse the leaves thoroughly under running water multiple times to remove any dirt or grit. For an extra clean wash, soak the bok choy in water with a splash of vinegar for at least a minute to help remove any residual pesticides. After soaking, rinse again and drain well. Bring a pot of water to a boil with a pinch of salt. Blanch the bok choy for no more than 1 minute. Bok choy cooks very quickly, so blanching it briefly will preserve its delightful crispness.
