  • 3 cucumbers
  • 1/4 onion
  • 1/2 bunch chives (approx. 50g)

Seasoning Ingredients

  • 3 Tbsp anchovy sauce (myeolchi aekjeot)
  • 2 Tbsp onion syrup or plum/yuzu extract
  • 2 Tbsp minced garlic
  • 1/2 tsp ginger powder (or a little grated ginger)
  • A pinch of toasted sesame seeds
  • 2 Tbsp gochugaru (Korean chili flakes), adjust to taste

Thoroughly wash the cucumbers, then cut them lengthwise into quarters. If the seed part is prominent, gently scrape it out with a knife for a cleaner cut.

Cut the quartered cucumbers lengthwise again. This ensures the seasoning coats evenly and makes them easy to eat.

Slice the cucumbers into bite-sized pieces, about 3cm long. If they’re too long, they’ll be hard to mix; too short, and the crispiness might be diminished. Aim for a moderate length.

In a large bowl, combine the sliced cucumbers, chives, and all the seasoning ingredients: gochugaru, minced garlic, ginger powder, anchovy sauce, and onion syrup (or plum/yuzu extract).

Taste a small piece before mixing. Since the cucumbers are not salted beforehand, season the dressing slightly saltier than you think necessary. This prevents the salad from becoming too watery and ensures a balanced flavor.
