Seasoning

  • 0.5 tsp Baby Doenjang (mild fermented soybean paste)
  • 0.5 tsp Baby Soy Sauce
  • 1 tsp Sesame Oil
  • 1 tsp Toasted Sesame Seeds
  • 1 tsp Pear Juice

First, prepare all the ingredients needed for the recipe thoroughly.

To remove soil from the young cabbage, fill a bowl with plenty of water, dissolve 2 teaspoons of vinegar in it, and then soak the young cabbage. Gently shake it with your hands to help the dirt detach.

After the initial soil removal, rinse the young cabbage under running water, carefully checking between the leaves to ensure it’s clean. This is a crucial step to enjoy fresh vegetables deliciously.

Fill a large pot with plenty of water and bring it to a rolling boil. Once the water is boiling, add the cleaned young cabbage and blanch for exactly 40 seconds. Blanching it just enough to wilt the leaves will preserve its crisp texture.

Immediately after blanching, rinse the young cabbage in cold water to cool it down. This helps maintain the vegetable’s freshness and crispiness.

Gently but firmly squeeze the excess water out of the blanched young cabbage with both hands. Leaving too much water can dilute the seasoning and make the dish taste bland.

Cut the de-watered young cabbage into bite-sized pieces. Cutting them into approximately 3-4 cm lengths is ideal for babies to eat easily.

For the seasoning, place the toasted sesame seeds in a mortar and pestle and grind them finely. The freshly ground, fragrant sesame seeds will significantly enhance the salad’s flavor.

Gently mix with your hands, ensuring the seasoning is evenly distributed throughout the cabbage.
