Chewy Soy Sauce Braised Fish Cake

This soy sauce fish cake stir-fry is made with nostalgic flavors reminiscent of my mother’s cooking. The key to a great fish cake stir-fry is its chewy texture! Cut into strips and served over warm rice, it makes for a hearty and satisfying meal. Every bite brings a smile of contentment! It’s a guaranteed rice-thief!

Main Ingredients

  • Fish cake (Eomuk) 1kg (generously prepared!)
  • Carrot 1 cup (approx. 100g, julienned)
  • Onion 1 cup (approx. 100g, julienned)
  • Chives 1 cup (approx. 50g, cut into 5cm lengths)

Seasoning Ingredients

  • Soy sauce 3 Tbsp
  • Oyster sauce 3 Tbsp (adds umami!)
  • Corn syrup 3 Tbsp (for shine and sweetness)
  • Minced garlic 3 Tbsp (for a rich flavor!)

Cooking Instructions

Step 1

First, prepare about 1kg of fish cake. Slice them into long, generous strips to achieve the desired chewy texture. Cutting them not too thin will enhance their chewiness after stir-frying!

Heat a good amount of cooking oil in a pan over medium-high heat. Add the sliced fish cake and stir-fry until lightly coated in oil and slightly golden, which helps develop its chewy texture. Then, add 3 Tbsp of soy sauce, 3 Tbsp of oyster sauce, and 3 Tbsp of corn syrup. Continue to stir-fry, ensuring the fish cake absorbs the sauce well.

Once the fish cake starts to soften and the sauce begins to reduce (stir-fry for about 10 minutes), add the julienned carrots and onions. Adding vegetables introduces delightful texture and vibrant color to the dish.

Continue to stir-fry for another 5 minutes, allowing the fish cake and vegetables to meld together. You’ll notice the fish cakes lightly ‘pressing’ against each other, indicating the peak of chewiness. Be mindful of the heat as it’s nearing completion.

Finally, add a handful of chives cut into 5cm lengths and stir-fry quickly. Chives can become mushy if overcooked, so add them just before turning off the heat and toss briefly to maintain their fresh aroma. This is the secret to a vibrant finish!
