Today, I’m sharing an ultra-simple version of ‘Stir-Fried Anchovies with Soy Sauce.’ It’s perfect for those busy days and will become a staple on your dining table!
Ingredients- 300g dried anchovies for stir-frying
- 1/3 cup chopped green onion
Seasoning- 3 Tbsp soy sauce
- 1 Tbsp plum extract
- 1 Tbsp cooking wine (or soju)
- 1/2 Tbsp ginger syrup
- 1/3 Tbsp sesame oil

Cooking Instructions
Step 1
First, prepare the green onions. Chop them into small pieces. Lightly oil a pan and over medium-low heat, slowly sauté the chopped green onions to create fragrant green onion oil. This step significantly enhances the flavor of the anchovy stir-fry.
Step 2
Now, let’s prepare the anchovies. Use dried anchovies suitable for stir-frying. If they seem too hard, microwave them for about 30 seconds to remove moisture, which will result in crispier fried anchovies. Before stir-frying, place them in a sieve to shake off any powdery residue for a cleaner dish. Add the prepared anchovies to the pan with the green onion oil and stir-fry quickly. Keep tossing them around in the pan as if they’re dancing, ensuring they’re well combined with the oil.

While the anchovies are lightly stir-frying, mix all the seasoning ingredients together. Combine the soy sauce, plum extract, cooking wine (or soju), and ginger syrup in a bowl. Once the anchovies are somewhat stir-fried, pour the prepared sauce into the pan and stir-fry over high heat quickly. The key is to stir-fry rapidly for about 30 seconds to 1 minute, ensuring the sauce coats the anchovies evenly. Be careful not to overcook, as the anchovies can become tough!
