How to Make Delicious Steamed Croaker
We made a delicious steamed dish using thick and fresh croaker fillets. While grilled croaker is also tasty, steaming it brings out a delicate, savory flavor without any fishiness. This recipe is perfect for adding a touch of elegance to your holiday table or a special meal.
Main Ingredients- 1 Croaker fish
- 1/2 stalk Scallion
- 2 Korean Green Chilies
- 1 Dried Red Chili
Seasoning Ingredients- 2 Tbsp Soy Sauce
- 1 Tbsp Fish Sauce (Anchovy or Tuna)
- 1 Tbsp Cooking Wine (Mirin or Sake)
- 1/2 Tbsp Allulose (or other sweetener)
- 1/2 Tbsp Ginger Paste or Grated Ginger
- 1 Tbsp Minced Garlic
- Pinch of Black Pepper
- 1 Tbsp Perilla Oil (or Sesame Oil)
- 1 Tbsp Olive Oil
- 1 cup Water
- 2 Tbsp Soy Sauce
- 1 Tbsp Fish Sauce (Anchovy or Tuna)
- 1 Tbsp Cooking Wine (Mirin or Sake)
- 1/2 Tbsp Allulose (or other sweetener)
- 1/2 Tbsp Ginger Paste or Grated Ginger

- Pinch of Black Pepper

Cooking Instructions
Step 1
The semi-dried croaker has a slight pre-seasoning. First, trim off the tail and fins. Then, make diagonal slits on one side of the fish to help the seasoning penetrate deeply. Slice the radish into large pieces to place at the bottom of the steaming dish. The radish will add a subtle sweetness and umami.
Step 2
Slice the 2 Korean green chilies into rounds. Cut the 1/2 stalk of scallion into diagonal pieces. Also, cut the 1 dried red chili into desired pieces. These vegetables will help to balance the flavor and add a fragrant aroma.

The secret to delicious steamed croaker is the sauce! In a bowl, combine 1 cup of water with the prepared scallions and green chilies. Add 2 Tbsp soy sauce, 1 Tbsp fish sauce, 1/2 Tbsp allulose (adjust sweetness to your preference), 1 Tbsp minced garlic, 1/2 Tbsp ginger paste, and 1 Tbsp cooking wine. Mix well.

Add a pinch of black pepper to the sauce mixture and stir thoroughly until all ingredients are well combined. This sauce will enhance the natural flavor of the croaker.

Now, let’s assemble the dish for steaming. Place the sliced radish at the bottom of your pan or steamer. Lay the prepared croaker fillet on top of the radish. Generously spoon the prepared sauce mixture over the fish, ensuring it coats the fillet evenly and seeps into the cuts.

Drizzle 1 Tbsp of perilla oil over the sauce on the fish. The nutty aroma of perilla oil adds another layer of flavor. Cover the pan and bring it to a boil over medium-high heat. Once it starts boiling vigorously, reduce the heat to medium. Baste the fish by spooning the sauce from the bottom of the pan over the croaker fillet. Repeating this a few times will ensure the fish absorbs the flavors beautifully, resulting in a mouthwatering steamed croaker.
