Main Ingredients- 750g chicken, cut into pieces
- 2 medium potatoes, peeled
- 1/2 carrot, peeled
- 1/2 onion
- 2 Korean green chilies (cheongyang peppers)
- 8 bird’s eye chilies (or to taste for spice)
- 5 bay leaves
Sauce- 2 Tbsp minced garlic
- 15 Tbsp soy sauce
- 3 Tbsp sugar
- 0.2g black pepper (a pinch)
- 1/2 tsp instant coffee powder (helps tenderize and deepen flavor)

Cooking Instructions
Step 1
1. Rinse the chicken thoroughly under running water. In a pot, combine the chicken, water, and bay leaves. Bring to a rolling boil over high heat and cook for 10 minutes. This step helps remove impurities and any gamey smell from the chicken. 2. Once boiled, drain the chicken and rinse it again under cold running water. This ensures a cleaner taste and texture for the final dish.
Step 2
Peel and cut the potatoes and carrot into bite-sized pieces, similar in size to the chicken pieces. Slice the onion into wedges. Trim the stems off the green chilies and bird’s eye chilies, then slice them diagonally. (Adjust the amount of bird’s eye chilies based on your spice preference.)

In a bowl, combine the minced garlic, soy sauce, sugar, black pepper, and instant coffee powder. Whisk everything together until well combined to create the sauce. The coffee powder is a secret ingredient that masks any unwanted chicken odor and adds a subtle depth of flavor.
