  • 2 Okra pods
  • 2 Eggs
  • Pinch of salt

First, crack 2 fresh eggs into a bowl. Add a pinch of fine salt and whisk them thoroughly with chopsticks or a whisk until the yolks and whites are well combined, creating a smooth egg mixture.

If using frozen okra, gently rinse it under cool running water to thaw. Pat dry the okra and carefully trim off the tough ends of the pods with a knife. This step ensures the best texture and fresh flavor.

Lightly grease a non-stick pan with a small amount of oil, wiping it thin with a paper towel. Pour a thin layer of the beaten egg mixture into the pan over medium-low heat. As the egg begins to set, carefully place the prepared okra pods in the center. Gently roll the egg mixture around the okra as it cooks, forming a rolled omelet. If the egg isn’t enough to cover, gradually pour more of the egg mixture around the edges and continue to roll, encasing the okra. Be mindful of the heat to prevent burning.

Once the omelet is rolled, carefully transfer it to a bamboo sushi rolling mat. Use the mat to shape it into a neat, log-like form. Roll the mat tightly around the omelet and let it sit for about 2-3 minutes to help it hold its shape.

After the shape has set, remove the okra rolled omelet from the mat and slice it into bite-sized pieces. While a star-shaped cross-section would be lovely, today it looks like a classic omelet slice. Either way, it’s delicious!

I made a small batch today just to enjoy. Next time, I plan to wrap it with thin slices of bacon before rolling the omelet – that’s incredibly delicious too! The combination of okra and bacon is always a winner. Give it a try!
