How to Make Delicious Suyuk at Home

Main Ingredients- 1.2kg Pork (leg cut or belly)
- 1/2 Onion
- 1/4 Leek (large green onion)
- 7 Cloves Garlic
Aromatics & Seasoning- 3 Tbsp Doenjang (fermented soybean paste)
- 3 Tbsp Won-dang (or granulated sugar)
- 3 Tbsp Jin-ganjang (soy sauce for soup & stew)

Cooking Instructions
Step 1
First, prepare your aromatics. Wash and peel the onion, then cut it into quarters. Chop the leek into large, manageable pieces. Wash the whole garlic cloves.
Step 2
Place the whole piece of pork into a large, deep pot. Add the prepared onion, leek, and garlic on top of the meat. Pour in enough cold water to completely submerge the pork. Bring this to a boil over high heat.
Step 3
Once the water begins to boil, add the doenjang, won-dang (or sugar), and jin-ganjang to the pot. Use a spoon to gently dissolve the doenjang into the broth, ensuring it mixes well. These seasonings will help eliminate any porky odors and add a deep, savory flavor.
Step 4
When the broth returns to a rolling boil, reduce the heat to medium. Leave the lid slightly ajar or on, and let it simmer gently until the water level reduces by half. During this simmering process, the pork will become incredibly tender and a rich broth will develop. This usually takes about 30-40 minutes.

To ensure the pork cooks evenly, it’s a good idea to flip it over once halfway through the simmering time. This prevents one side from overcooking or undercooking.

Once the pork is cooked through, carefully remove it from the pot and let it cool slightly. If you try to slice it while it’s piping hot, it might fall apart. Slice it thinly when it’s warm enough to handle but not scalding. Thinner slices will give you the most tender texture.
