Today, we’ll be making a delicious and healthy jujube latte, perfect for sipping during winter. I’ve adapted this recipe to be even simpler than what you might see on TV. Ingredients

  • 15 fresh jujubes
  • 250ml fresh milk
  • 400ml water
  • 3 tablespoons honey (adjust to taste)
  • Pinch of ground cinnamon (for garnish)

First step to making your delicious jujube latte! Let’s clean the jujubes. Fill a bowl with plenty of water and add about 1/2 teaspoon of baking soda. If you don’t have baking soda, you can use an equal amount of vinegar. Soaking the jujubes in this baking soda (or vinegar) solution for about 2 minutes effectively removes dust and impurities from their surface. After the time is up, rinse them thoroughly under running water, and then drain them well in a colander.

Now, it’s time to extract the rich flavor from the jujubes. Pour 400ml of clean water into a pot and bring it to a rolling boil over high heat. Once the water starts boiling, add all 15 prepared jujubes. Reduce the heat to medium-low and simmer gently for 10 minutes. After simmering, turn off the heat and let the water cool completely. This allows the jujube’s flavor and aroma to fully infuse into the water. During this process, more beneficial compounds from the jujubes will be extracted.

While the jujube water is cooling, take out the boiled jujubes and remove their seeds. The jujubes, having been softened by boiling, are much easier to deseed. Carefully remove the seeds using a spoon or your fingers. It’s important to remove the seeds as they can impart a bitter taste.

We’ll now use the reserved jujube-infused water. Pour about 2/3 of a paper cup’s worth of the jujube-infused water back into the pot, along with the de-seeded jujube pulp. Bring it to a simmer over high heat and reduce it until the jujubes and water become thicker. Stirring with a spatula, continue cooking until the liquid has significantly reduced and a syrupy consistency is achieved. Once it’s almost dry and thick, turn off the heat and blend it into a smooth puree using an immersion blender or a regular blender. This process results in a concentrated jujube puree bursting with natural flavor.

Let’s add sweetness to the well-blended jujube puree to make jujube paste! Add 3 tablespoons of honey to the pot and simmer again over low heat with the jujube puree. Stir constantly for about 1-2 minutes until the honey is well combined with the jujubes. Your jujube paste, with its subtle sweetness and deep flavor, is now ready! It’s convenient to store it in the refrigerator and use it whenever needed.

Now, let’s prepare the warm milk. Place 250ml of cold milk in the microwave and heat it for about 1 minute until it’s warm. Make sure it’s not too hot, just a comfortably warm temperature for drinking. The warmth of the milk will blend beautifully with the benefits of the jujube, creating a truly comforting beverage.

This is the final step! Add 2 generous tablespoons of the prepared jujube paste to the warmed milk. Stir well with a spoon until the jujube paste is completely dissolved into the milk. You can adjust the amount of jujube paste according to your preference for sweetness. Finally, if you like, sprinkle a pinch of aromatic ground cinnamon on top. Your wonderful winter health drink, the jujube latte, is complete! ☕️
