  • Acorn Jelly (Dotori Muk) – 350g
  • Kimchi (fermented napa cabbage) – 80g
  • Sesame Oil – 1 Tbsp
  • Sugar – 1 tsp
  • Cucumber – 70g (approx. 1/4 medium cucumber)
  • Dried Seaweed (Gim) – 5g (roasted or seasoned)
  • Sesame Seeds (toasted) – 5g
  • Store-bought Cold Noodle Broth (Naengmyeon Broth) – 600g (1 packet)

Cooking Instructions

Wash the cucumber thoroughly and thinly julienne it. While thicker cuts offer a pleasant chew, thinner slices will blend better with the other ingredients.

Lightly rinse the acorn jelly under running water. Cut it into bite-sized pieces, about 1.5 cm thick and elongated. Avoid cutting it too thinly, as this will diminish its chewy texture.

Use slightly fermented kimchi for the best flavor. Rinse it lightly under cold water to remove excess sourness, then chop it very finely. Using kimchi that’s a bit sour will add a deeper umami flavor.
