Spicy & Flavorful Tofu Stew with Pork

This flavorful tofu stew is loaded with fresh pork and soft tofu, seasoned with a rich and spicy sauce for a truly delightful dish. It’s guaranteed to be a rice-lover’s dream!
Stew Ingredients- 500g sliced pork shoulder
- 1 block of tofu (approx. 400-450g)
- 1/2 stalk of green onion
- 400cc water
Flavorful Seasoning Paste- 5 Tbsp gochugaru (Korean chili flakes)
- 2 Tbsp sugar
- 3 Tbsp soy sauce
- 1 Tbsp oyster sauce
- 3 Tbsp mirin (rice wine)
- 2 Tbsp fish sauce
- 1/2 Tbsp gochujang (Korean chili paste)
- 1/2 Tbsp doenjang (fermented soybean paste)
- 2 Tbsp minced garlic
- 1 Tbsp sesame oil
- 2-3 pinches of black pepper
- 5 Tbsp gochugaru (Korean chili flakes)
- 2 Tbsp sugar
- 3 Tbsp soy sauce
- 1 Tbsp oyster sauce
- 3 Tbsp mirin (rice wine)
- 2 Tbsp fish sauce
- 1/2 Tbsp gochujang (Korean chili paste)
- 1/2 Tbsp doenjang (fermented soybean paste)
- 2 Tbsp minced garlic
- 1 Tbsp sesame oil
- 2-3 pinches of black pepper
Cooking Instructions
Step 1
Measurements are based on a standard Korean rice spoon (approximately 8cc). First, thinly slice the green onion into pieces about 1cm thick. Step 2
Cut the tofu into 1-2cm thick pieces. The weight of a block of tofu can vary slightly by brand, but typically ranges from 400-450g. The tofu used in this recipe weighed 420g.
Step 3
Want to reduce your dishwashing load? It’s easy! Add the pork, all the seasoning ingredients (except the tofu and green onion), and 400cc of water to the pot all at once. Cleanup is minimal!
Step 4
Place all the ingredients in the pot and bring to a boil over high heat. Stir well, and once the liquid starts boiling, let it simmer vigorously for 3-4 minutes to allow the flavors to meld with the pork. Then, add the sliced tofu and green onion and bring back to a boil. Pro Tip: To minimize washing up, slice the tofu directly in its container and snip the green onion into pieces with scissors before adding them! (I used a cutting board for the green onion because I was already using it for something else.)
Step 5
After adding the tofu and green onion, continue to simmer until the broth is reduced by about half. Taste the stew and if it needs more seasoning, simmer for additional 1-minute intervals. If your stove is very powerful and the broth reduces too quickly, don’t panic! Simply add another 100cc of water and simmer for a bit longer. Panicking while cooking can lead to a ruined dish, so stay calm and adjust as needed! 😉
