Tender Pork Rib Kimchi Stew (Pressure Cooker Recipe)

When your appetite is lacking, a bite of tender, well-cooked kimchi can bring it right back. ^^ I’ve made this pork rib kimchi stew by wrapping kimchi around the ribs for my family who aren’t feeling hungry. This is a simple recipe that uses the flavor of kimchi to season everything in the pressure cooker. ^^

Ingredients

  • Pork back ribs 1004g
  • Well-fermented kimchi 764g (about 2 large leaves from a small head)
  • Anchovy broth 150ml
  • Mirin (rice wine) 2 Tbsp
  • A little kimchi brine (optional)

Cooking Instructions

Step 1

Prepare all your ingredients. For the kimchi, I recommend not removing the inner filling and using the leaves as they are. This helps retain the kimchi’s original flavor and seasoning within the stew.

Now, we’ll wrap the pork ribs with kimchi leaves. Take one large kimchi leaf and place a piece of pork rib on it. Roll the kimchi leaf around the rib to enclose it snugly. If this wrapping process seems too tedious, don’t worry! You can simply layer the kimchi and ribs directly in the pot or pressure cooker without wrapping. The flavor will still be delicious.

Carefully arrange the wrapped (or unwrapped) pork rib kimchi pieces into the pressure cooker, layering them neatly.

Pour in the anchovy broth to cover the ribs and kimchi. Add 2 tablespoons of mirin (rice wine) to help tenderize the meat and add a subtle sweetness and depth of flavor. If your kimchi is particularly sour, you can add a pinch of sugar to balance the acidity. (This step is optional.)

Close the pressure cooker lid and bring it to a boil over high heat. Once the pressure indicator starts to hiss and rock (indicating it’s at pressure), reduce the heat to medium-low. Let it cook for about 20 more minutes. The total cooking time in the pressure cooker will be around 30 minutes.

Once the pressure has completely released from the pressure cooker, carefully open the lid. Now, add your desired vegetables, such as sliced onion, diagonally cut green onion, and red chili peppers. Simmer for a few more minutes until the vegetables are tender-crisp. Taste the stew and adjust the seasoning if needed by adding a little of the reserved kimchi brine. The kimchi brine will add an extra layer of savory flavor.
