For the Kong Banchan (Braised Beans)

  • 500g roasted soybeans (use store-bought roasted yellow beans)
  • 2 cups Korean soy sauce (joseon ganjang)
  • 800ml water
  • 70g red pepper powder (gochugaru)
  • 2 Tbsp minced garlic
  • 1.5 Tbsp toasted sesame seeds
  • 2 Tbsp sesame oil

Prepare the roasted beans. Using store-bought roasted yellow beans makes the process much simpler. You can roast raw beans yourself, but it takes quite a bit of time, so using pre-roasted beans is a convenient option.

In a pot or bowl, combine all the seasoning ingredients except for the sesame oil: Korean soy sauce, water, red pepper powder, minced garlic, and toasted sesame seeds. Mix them well to create the braising sauce.

Add the prepared roasted beans to the sauce and mix thoroughly to ensure they are evenly coated. Let the beans soak in the sauce for a bit to absorb the flavors.

Simmer the bean mixture, stirring occasionally. The key is to reduce the liquid until the beans have absorbed most of the moisture and the mixture is thick. Test a bean; it should be tender, not hard, and well-seasoned with a nutty flavor. Finally, drizzle in the sesame oil, mix well, and your delicious Kong Banchan is ready!
