  • Category : Kimchi / Fermented foods / Sauces
  • Ingredient Category : Vegetables
  • Occasion : Everyday
  • Cooking : Seasoned mix
  • Servings : 3 servings
  • Cooking Time : Within 60 minutes
  • Difficulty : Anyone

Main Ingredients

  • 1/4 head of fresh cabbage
  • 1/2 stalk of fresh green onion

Seasoning Ingredients

  • 1/2 Tbsp coarse salt (for wilting cabbage)
  • 1/4 Tbsp granulated sugar
  • 2 Tbsp gochugaru (Korean chili flakes) (adjust for color and spice)
  • 1/2 Tbsp minced garlic
  • 1 Tbsp anchovy sauce (for umami)
  • 1 Tbsp tuna sauce (for umami)
  • 1/2 Tbsp toasted sesame seeds (for nutty aroma)

Cooking Instructions

Step 1

First, wash the cabbage thoroughly and then cut it into bite-sized square pieces, about 2 cm in size. Sprinkle 1/2 Tbsp of coarse salt over the cut cabbage and mix evenly. Let it wilt for about 30 minutes, allowing the cabbage to soften while maintaining its crispiness. It’s good to toss it once or twice during this time.

Step 1

Step 2

While the cabbage is wilting, prepare the seasoning ingredients. In a bowl, combine 1/4 Tbsp sugar, 2 Tbsp gochugaru, 1/2 Tbsp minced garlic, 1 Tbsp anchovy sauce, and 1 Tbsp tuna sauce. Finally, add 1/2 Tbsp of toasted sesame seeds for a nutty aroma and stir until all the seasonings are well combined.

Step 2

Step 3

This is how you create the delicious seasoning sauce with all the ingredients harmoniously blended together. The color of the sauce looks appetizing, doesn’t it!

Step 3

Step 4

After wilting for 30 minutes, drain the cabbage thoroughly by placing it in a colander. It’s important to squeeze out excess water to prevent the kimchi from becoming too watery and bland. Add the drained cabbage to the prepared seasoning sauce and gently mix with your hands until the seasoning coats the cabbage evenly. It’s best to mix gently to keep the cabbage crisp.

Step 4

Step 5

Lastly, thinly slice the green onion diagonally. Add the diagonally sliced green onion to the cabbage kimchi and mix lightly once more. The slightly pungent flavor and aroma of the green onion will further enhance the kimchi’s overall taste.

Step 5

Step 6

Taste the finished cabbage kimchi. If it feels a bit bland, adjust the seasoning by adding more salt or fish sauce to your preference. You can enjoy this delicious homemade cabbage kimchi right away, or let it ferment in the refrigerator for an even richer flavor.
