Ingredients

  • 1 bowl of rice (warm)
  • 1 cup kimchi (finely chopped)
  • 1/2 green onion (chopped)
  • 1 can Spam (cubed)
  • 1 Tbsp cooking oil
  • 1 tsp sesame seeds
  • 1 Tbsp perilla oil
  • 1 egg

Cooking Instructions

First, finely chop the kimchi into bite-sized pieces. Chop the green onion. Heat 1 Tbsp of cooking oil in a frying pan over medium-low heat. Add the chopped green onion and stir-fry until fragrant, creating green onion oil. Once the aroma is released, add the cubed Spam and chopped kimchi. Stir-fry over medium heat until the Spam is lightly browned and the kimchi softens.

Once the ingredients are partially cooked, add 1 bowl of warm rice. Gently break up the rice with a spatula, ensuring no clumps, and stir-fry. Mix well so the seasonings coat every grain of rice. Just before turning off the heat, sprinkle in 1 tsp of sesame seeds for a nutty flavor. Finally, turn off the heat and drizzle in 1 Tbsp of perilla oil, mixing gently to combine. This creates a delicious kimchi fried rice. Adding perilla oil at the end preserves its fragrance and enhances its flavor.

Prepare a fried egg to accompany the fried rice. I personally prefer a sunny-side-up egg, so I cooked it that way. A runny yolk from a sunny-side-up egg adds a rich, creamy texture and savory flavor when mixed with the fried rice. You can cook it to your preference, fully cooked if you like.
