Main Ingredients- 2 medium potatoes
- 1/4 stalk green onion (about 10cm length)
Broth Ingredients- 10 dried anchovies for broth (gutted)
- 1 sheet dried kelp (10x10cm)

- 1 tsp salt (adjust to taste)

Cooking Instructions
Step 1
To start making your delicious potato soup, let’s first prepare the broth. In a pot, add 4 and 1/2 cups (about 900ml) of cold water. Add the 10 gutted dried anchovies for broth and the 10x10cm sheet of dried kelp. Bring to a boil over medium-high heat. Once boiling, reduce the heat to medium-low and simmer for another 10 minutes. After 10 minutes, strain out the anchovies and kelp to get a clear broth.
Step 2
Now it’s time to prepare the star of the soup: the potatoes. Peel the potatoes and slice them into thick half-moons, about 0.7cm thick. Heat 1 tablespoon of sesame oil in the pot, and add the sliced potatoes. Stir and sauté the potatoes over medium-low heat for about 2-3 minutes, until their surfaces start to look translucent. Coating the potatoes in oil will make them even more tender.
Step 3
Once the potato surfaces begin to turn translucent, pour in all the clear anchovy-kelp broth you prepared earlier. Increase the heat to high and bring the soup to a boil with the lid off. This helps the potatoes cook faster and adds more umami to the broth.
Step 4
When the soup is vigorously boiling, reduce the heat to medium. Now, add the chopped green onions, followed by the seasoning ingredients: 1 teaspoon of salt, 1 teaspoon of minced garlic, and a pinch of black pepper to season the soup. Continue to simmer for another 5-7 minutes, or until the potatoes are tender enough to be easily pierced with a fork. Taste and add more salt if needed.
