Aromatic Garlic Scape and Shrimp Rice Cooked in a Pot

I bought some garlic scapes and made two kinds of seasoned dishes, a pickle, and even this delicious rice pot dish! This rice pot dish, made with shrimp, has a beautiful color. I made it simply using frozen shrimp. Let’s get started!

Ingredients

  • 1 and 1/4 cups rice (200ml cup)
  • 1 cup frozen shrimp (approx. 150g)
  • A little garlic scape
  • 1 tsp Tsuyu (Japanese soup base)
  • 1 Tbsp soy sauce
  • A little butter
  • 1 Tbsp cooking sake
  • A little sesame oil

Cooking Instructions

Step 1

First, rinse 1 and 1/4 cups of rice and soak it in water for about 30 minutes. Soak kelp in the same amount of cold water as the rice for 10 minutes.

Finely chop the garlic scapes, then wash them and pat them dry.

I used pre-cooked frozen shrimp. Raw shrimp or frozen shrimp meat also works. Frozen shrimp will thaw quickly if you rinse them a few times under running water. Dice half of the shrimp to a size where you can still feel the texture when you bite into it, for mixing into the rice. Leave the other half whole for topping the rice.

Divide the prepared garlic scapes into two portions as well.

In a heated pot, add a little sesame oil and stir-fry the minced frozen shrimp and garlic scapes. Add 1 Tbsp of cooking sake and stir-fry. (I added a little sake because I was worried the frozen shrimp might be fishy.)

Add the soaked rice, 1 tsp of Tsuyu, and 1 Tbsp of soy sauce, and stir-fry briefly.

Add the kelp-infused water, which should be the same amount as the rice.

Place the kelp on top, close the lid, and cook. Bring to a boil over medium-high heat, then reduce to low heat and cook for 15 minutes. Turn off the heat and let it steam for 10 minutes.

While the rice is cooking, let’s prepare the topping. Melt butter in a pan, add the minced garlic scapes and shrimp, and stir-fry. Add a tiny pinch of salt. Once everything is cooked, the topping is ready.

Once the rice pot is done, remove the kelp. Top the finished rice with the butter-sautéed garlic scapes and shrimp topping. Enjoy your delicious rice!
