Spicy Gochujang Stew (Gochujang Jjigae)

Main Ingredients

  • 1 cup fermented kimchi (approx. 200g), chopped
  • 1 can (150g) tuna, drained
  • 1/2 can (approx. 200g) Spam, cubed
  • 1/2 block firm tofu (approx. 150g), cubed
  • 1 medium potato, cut into thick slices
  • 1/3 zucchini, cut into thick slices
  • 1/2 onion, cut into thick slices
  • 1 green chili pepper (preferably Korean Cheongyang chili), thinly sliced
  • 1/3 stalk green onion, thinly sliced
  • 3 cups water (approx. 600ml)

Seasoning Ingredients

  • 1 Tbsp Gochujang (Korean chili paste)
  • 1 Tbsp Gochugaru (Korean chili flakes)
  • 2 Tbsp Guk-ganjang (Korean soup soy sauce)
  • Kimchi juice, to taste (adjust according to preference)

Cooking Instructions

Step 1

Prepare all ingredients by cutting them into bite-sized pieces. Cube the Spam and tofu. Slice the potato, zucchini, and onion into thick pieces. Thinly slice the green onion and green chili pepper. Chop the fermented kimchi into roughly 1-cup’s worth.

In a pot with a good depth, combine the sliced potato, tofu, Spam, onion, zucchini, and the drained tuna.

Pour the 3 cups of water into the pot. Ensure the ingredients are mostly submerged.

Dissolve the 2 Tbsp of Guk-ganjang and 1 Tbsp of Gochujang in the water. Bring to a boil over high heat and cook until the potatoes are tender. This should take about 10-15 minutes.

Once the potatoes are almost cooked, add the chopped fermented kimchi (1 cup) and about 5-6 Tbsp of kimchi juice. The amount of kimchi juice can be adjusted based on the saltiness of your kimchi and your personal taste. Let it simmer for a bit longer to allow the kimchi flavor to infuse into the stew.

Optionally, add 1 Tbsp of Gochugaru for an extra kick of spiciness. (This step is optional.)

Finally, add all the sliced green onion and green chili pepper, and boil for another minute or two. Taste the stew and adjust the seasoning with salt if needed. This is the final touch to perfect your Gochujang Jjigae.
