- 300-400ml Anchovy Broth (or rice water, or plain water)
- 4 Tbsp Korean Soy Sauce (for deep umami)
- 3 Tbsp Red Pepper Flakes (for spiciness and color)
- 1 Tbsp Minced Garlic (enhances flavor)
- 1/2 Tbsp Sugar (balances the flavors)
- 5 Tbsp Perilla Oil (for nutty aroma and richness; reserve 2 Tbsp for the end)
- 300-400ml Anchovy Broth (or rice water, or plain water)
Cooking Instructions
Step 1
First, cut the firm tofu into 1cm thick slices. Larger pieces will hold their shape better while cooking.
Step 2
Finely mince the Korean green chilies and red chili. If you prefer it spicier, feel free to add more green chilies.
Step 3
Cut the green onion diagonally into large pieces. Larger pieces provide a nice texture and contribute to a richer broth.
Step 4
Peel and thinly slice the onion. Its natural sweetness will add depth to the stew.
Step 5
In a pot, add 300ml of water and an anchovy broth pack. Boil for 10 minutes to create a flavorful anchovy broth. If you don’t have an anchovy pack, rice water or plain water works well too.
Step 6
Remove the anchovy broth pack from the pot. Carefully add the prepared tofu slices. Handle the tofu gently to prevent it from breaking apart as it cooks.
Step 7
Add 4 tablespoons of Korean soy sauce. This will provide a deep, savory flavor to the broth.
Step 8
Stir in 3 tablespoons of red pepper flakes for a spicy kick and a vibrant red color. You can adjust the amount of pepper flakes to control the heat level.
Step 9
Add 1 tablespoon of minced garlic to enhance the aroma and taste. Garlic’s fragrant notes will make the stew even more delicious.
Step 10
Add 1/2 tablespoon of sugar to balance the flavors, and a pinch of black pepper if desired.
Step 11
Add all the prepared ingredients: chopped green onions, chilies, and sliced onion.
Step 12
Generously add 3 tablespoons of perilla oil for its signature nutty aroma. Bring the stew to a simmer over medium heat. Perilla oil will elevate the flavors of the tofu and vegetables.
Step 13
Cover the pot with a lid and let it simmer until the broth has slightly reduced and the flavors have melded together, about 5-7 minutes. Stir occasionally.
Step 14
Once the broth has thickened to your liking, drizzle in the remaining 2 tablespoons of perilla oil to add a final burst of aroma. Turn off the heat. Adding perilla oil at the end preserves its delicate fragrance.
Step 15
Serve hot over a bowl of rice. Blowing on it gently before taking a bite is pure bliss! The soft tofu and the spicy, savory broth create a wonderful harmony.
Step 16
Take a spoonful, mix it with your rice, and enjoy a satisfying meal! This soft tofu stew is quick to make, making it perfect for busy days. Make a delicious and hearty meal tonight with this tofu stew!
