Main Ingredients

  • 500g fresh sweet potato greens

Seasoning

  • 1 Tbsp minced garlic
  • 1.5 Tbsp soup soy sauce (ganjang)
  • 2 Tbsp sesame oil (perilla oil can be substituted)
  • 0.5 Tbsp salt (adjust to taste)

Cooking Instructions

Step 1

First, prepare the fresh sweet potato greens. Gently snap the end of a stem; you should feel a tough outer skin. Hold the stem firmly and peel off the tough outer layer by pulling it upwards. Removing this skin will result in a much more tender texture. Trim or scrape away any parts that are too fibrous.

Blanching the prepared sweet potato greens briefly will enhance their tender yet crisp texture. Bring a pot of water to a boil, add 0.5 Tbsp of salt, and then add the cleaned sweet potato greens. Boil for about 6 minutes. Be careful not to overcook, as they can become mushy. Once boiled, drain them immediately without rinsing in cold water. Gently shake off any excess water. Draining them while hot helps prevent stickiness when stir-frying.

Now, let’s start stir-frying. Heat a pan over medium-high heat and add 2 Tbsp of fragrant sesame oil. You can also use nutty perilla oil for a different flavor profile. Once the oil is shimmering, add all the blanched sweet potato greens. Stir-fry quickly over high heat for about 1-2 minutes, until the greens are slightly wilted.

Add 1 Tbsp of minced garlic and 1.5 Tbsp of soup soy sauce to the pan. Stir-fry everything together, allowing the soy sauce to coat the greens and add a savory depth. Taste the mixture and adjust the seasoning by adding a little more salt if needed, until it reaches your desired flavor. Your delicious stir-fried sweet potato greens are now ready to be served!
