Oyster Sauce Eggplant Stir-Fry Ingredients

  • 2 eggplants
  • 102g onion (approx. 1/2 medium onion)
  • 33g green onion (approx. 1/4 stalk)
  • 1 Tbsp minced garlic
  • 0.7 Tbsp sesame oil (approx. 1/2 Tbsp)
  • 5 Tbsp grapeseed oil
  • A pinch of toasted sesame seeds

Oyster Sauce Eggplant Stir-Fry Seasoning

  • 1.2 Tbsp oyster sauce
  • 3-4 pinches of salt

Cooking Instructions

Step 1

First, thoroughly wash the eggplants under running water, gently rubbing them with your hands. Trim off both ends, then cut each eggplant in half lengthwise. Slice them into approximately 2-3mm thick pieces. While the exact shape and thickness are flexible, try to avoid cutting them too thick or too thin for optimal texture.

Step 1

Step 2

Finely chop the green onion (33g). Slice the onion (102g) into thin strips, about the same thickness as the eggplant slices. Have 1 Tbsp of minced garlic ready; this will make the cooking process smoother.

Step 2

Step 3

In a stir-fry pan, add 1 Tbsp of minced garlic and 5 Tbsp of grapeseed oil. Cook over medium heat until fragrant, about 1-2 minutes. This step infuses the oil with garlic flavor, enhancing the overall taste of the dish.

Step 3

Step 4

Once the garlic is fragrant, add the sliced onion and eggplant to the pan. Continue to stir-fry over medium heat, gently tossing the ingredients, until the eggplant becomes tender and slightly translucent. This usually takes about 3-4 minutes, but can vary depending on the thickness and amount of eggplant used.

Step 4

Step 5

When the eggplant is tender, pour in 1.2 Tbsp of oyster sauce. Stir well to coat all the ingredients evenly, continuing to cook over medium heat. Taste the stir-fry at this point to gauge the seasoning.

Step 5

Step 6

If the stir-fry tastes a bit bland, add 3-4 pinches of salt to adjust the seasoning according to your preference. Remember that oyster sauce already contains salt, so add it gradually.

Step 6

Step 7

Once the seasoning is perfect, add the chopped green onions. Stir-fry quickly over high heat for about 30 seconds, just until the green onions are fragrant. Then, immediately turn off the heat.

Step 7

Step 8

Turn off the heat and drizzle in 0.7 Tbsp of sesame oil. Gently toss everything together to ensure the sesame oil coats the stir-fry evenly, adding a wonderful aroma.

Step 8

Step 9

Finally, sprinkle a generous pinch of toasted sesame seeds over the dish. Your delicious Oyster Sauce Stir-Fried Eggplant is now ready to be served! Enjoy it with a warm bowl of rice.
