  • Category : Side dish
  • Ingredient Category : Eggs / Dairy
  • Occasion : Everyday
  • Cooking : Braise
  • Servings : 5 servings
  • Cooking Time : Within 30 minutes
  • Difficulty : Beginner

Main Ingredients

  • 13 Eggs
  • 10 Whole Garlic Cloves
  • 2 Korean Green Chili Peppers (optional, for a spicy kick)
  • 1 Leek (white part mainly)

Braising Liquid Seasoning

  • 500ml Water
  • 100ml Soy Sauce
  • 1 Tbsp Sugar
  • 2 Tbsp Oligosaccharide (corn syrup)

Cooking Instructions

Step 1

Boil the Eggs: In a pot, add enough water to cover the eggs. Add 1 tablespoon of salt and 1 tablespoon of vinegar to the water. (The vinegar helps make the shells easier to peel.) Place the eggs in the water and boil for about 15 minutes until hard-boiled. Be careful to prevent them from cracking.

Step 1

Step 2

Prepare the Flavorful Braising Liquid: In a pot, combine 500ml of water, 100ml of soy sauce, and 1 tablespoon of sugar. Bring to a boil over high heat. Stir to ensure the ingredients are well mixed.

Step 2

Step 3

Infuse with Garlic Flavor: Once the soy sauce mixture is boiling, add the 10 whole garlic cloves. The garlic will steep in the liquid, adding a wonderful depth of flavor.

Step 3

Step 4

Peel the Eggs: Immediately after boiling, transfer the eggs to cold water. This helps the shells contract, making them much easier to peel. Carefully remove the shells and set the eggs aside.

Step 4

Step 5

Marinate the Eggs in Seasoning: Add the peeled hard-boiled eggs to the simmering soy sauce mixture. Reduce the heat to medium and let them simmer gently for about 10-15 minutes. Turn the eggs occasionally to ensure they are evenly coated and slightly darkened by the sauce, indicating they have absorbed the flavors.

Step 5

Step 6

Prepare the Vegetables: Slice the onion into quarters. Finely chop the Korean green chili peppers and the leek. (If making this for children, you can omit the chili peppers or adjust the quantity.)

Step 6

Step 7

Add Vegetables and Simmer Further: Once the braising liquid has reduced slightly, add the sliced onion, chopped chili peppers, and leek. Simmer for another 5 minutes. The natural sweetness and aroma from the vegetables will meld with the braising liquid, creating a richer taste.

Step 7

Step 8

Finishing Touch: Turn off the heat and sprinkle with toasted sesame seeds. This adds visual appeal and a nutty aroma.

Step 8

Step 9

Enjoy! Your delicious savory and sweet braised eggs are ready to be enjoyed. Serve them with warm rice for a delightful meal!
