On a hot morning when your appetite is low, try this oven-baked potato dish! We’ve infused it with fish sauce to give it a Caesar dressing-like vibe, complementing the roasted potatoes, tomatoes, and onions. The fish sauce in the yogurt dressing creates a savory and salty flavor that pairs wonderfully with the potatoes. I often make my own yogurt for salads, but it’s also fantastic as a potato dressing. It’s a delicious way to enjoy a side dish!

  • 1 tomato
  • 1 sprig rosemary

Tangy Yogurt Dressing

  • 100ml yogurt
  • 2 tsp fish sauce
  • 1 tbsp Worcestershire sauce
  • 1 tsp minced garlic
  • 1 tsp whole grain mustard
  • Pinch of black pepper

Potato Seasoning

  • 2 tsp minced garlic
  • 2 tbsp olive oil
  • 1/4 tsp salt
  • Pinch of black pepper

Cooking Instructions

We’ll be using the baby potatoes with their skins on. Keeping the skins on adds a wonderful texture and boosts the nutritional value.

Wash the baby potatoes thoroughly under running water to remove any dirt or debris. Then, cut them into bite-sized pieces (about 2-3 cm). Be careful not to cut them too small, as they might fall apart while roasting.

Chop the onion into large pieces. Remove the stem from the tomato and cut it into similar-sized chunks. The vegetables will soften as they cook, so avoid cutting them too finely.

Pre-cooking the potatoes slightly will reduce the roasting time in the oven. Microwave them for about 4 minutes, or steam them for about 10 minutes. They should be tender enough to be pierced easily with a fork.

To the partially cooked potatoes, add the roughly chopped onion and tomato, along with the sprig of rosemary. Pour in all the seasoning ingredients (minced garlic, olive oil, salt, and pepper). Gently mix everything with your hands to ensure all ingredients are evenly coated with the seasoning.

Spread the seasoned potatoes and vegetables evenly on a baking sheet or in an air fryer basket. Place them in a preheated oven or air fryer at 180°C (350°F) and roast for about 20 minutes, or until golden brown and slightly crispy. Flipping them halfway through will ensure even cooking.
