Do your children eat their vegetables well? While my kids tend to eat them better than some their age, they specifically avoid vegetables like carrots, onions, and zucchini in curry. They love curry itself, but not the veggies inside! So, I came up with a little trick. I decided to make it like the ‘Chaedam Curry’ I bought from Market Kurly! I understand Chaedam Curry is cooked for so long that all the vegetables melt into it, leaving no chunks. Since I don’t have that kind of time or energy, I thought, ‘Why not just blend all the vegetables so they’re invisible?’ Some might say blending destroys nutrients, but isn’t it better than them not eating vegetables at all?

Ingredients

  • Curry powder mix 1 pack
  • Potatoes 2
  • Onion 1
  • Beef (for curry)
  • Carrot 1/2
  • Water (as needed)

Cooking Instructions

Step 1

We’re going to blend all ingredients except the meat and curry powder. Peel the potatoes and cut them into rough cubes. Peel and chop the onion. (Not pictured, but also wash and cube zucchini, mushrooms, and carrots if using).

Place the chopped ingredients and a little water into a blender and blend until smooth. The carrots give it a lovely orange hue!

Heat some oil in a pot and sauté the beef first. In our house, we always use beef for curry.

Once the beef is browned, add the blended vegetables and sauté briefly. The appearance might look a bit unusual due to the carrots, but it will look great once the curry powder is added.

Then, add the specified amount of water and bring to a boil. I added ‘Curry Queen’ with ‘Fond de Veau’ broth. Since the vegetables are blended, you need to stir occasionally while it simmers to prevent sticking to the bottom.

Once the water is boiling, add the curry powder and adjust the consistency to your liking.

Stir well to dissolve the curry powder without clumps, and that’s it!

Ta-da! Curry is complete! You can top it with tonkatsu or a fried egg, according to your preference. I enjoyed mine with a sunny-side-up fried egg. The kids can eat it easily because they don’t see the vegetables, and I’m happy that they’re getting their veggies. For children who dislike vegetables or pick them out of curry, try making it this way by blending them in! Just a slight change in the recipe can help your children eat their vegetables.
