Ingredients

  • 1 bunch fresh spinach
  • 1/4 carrot
  • Assorted seafood (mussels, shrimp, clams)
  • 2 Tbsp sliced almonds
  • 1 egg
  • 1 cup pancake mix (or all-purpose flour)
  • 3/4 cup cold water
  • 1 Tbsp cooking wine (or sake)
  • Cooking oil for frying

Cooking Instructions

First, trim and thoroughly wash the spinach, then drain it well and chop it into approximately 1cm pieces. Finely julienne the carrot. (You can also add onions or other vegetables if you like.) Lightly rinse the frozen seafood, soak it in cooking wine for about 5 minutes to remove any fishy odor, and then chop it into bite-sized pieces.

In a large bowl, combine the prepared spinach, carrot, and seafood. Add 1 cup of pancake mix and 3/4 cup of cold water. Mix everything together to create a batter. (Tip: If using all-purpose flour instead of pancake mix, add a pinch of salt and minced garlic for seasoning. Alternatively, you can first dissolve the flour in cold water to make a smooth batter, then add the other ingredients and mix for an even softer pancake. Feel free to use whichever method is convenient for you.)

Once the batter is partially mixed, crack in 1 egg and whisk it in. While pancake mix alone is sufficient, adding an egg will make the pancake even more savory and tender. It truly enhances the flavor, so be sure to include it!

Using chopsticks, gently mix all the ingredients into the batter. Avoid overmixing, as this can make the ingredients mushy. A light stir is best.

Now, add 2 tablespoons of sliced almonds for an extra nutty flavor. You can also use ground nuts if you have them, or simply omit them if unavailable. However, adding almonds provides a delightful crunch and rich, nutty taste with every bite, making the pancake even more special.

Heat a lightly oiled pan over medium heat. Spoon portions of the batter onto the pan to create pancakes of your desired size. It’s essential to fry them until golden brown and crispy on both sides.
