  • 1 Korean melon (Chamoe)
  • 60g Fresh chives (Buchu)

Flavorful Dressing

  • 0.5 Tbsp Soy sauce
  • 1.5 Tbsp Gochugaru (Korean chili flakes, fine)
  • 0.5 Tbsp Corn syrup or rice syrup
  • 0.5 Tbsp Minced garlic
  • 1 Tbsp Vinegar
  • A pinch of sesame seeds

Cooking Instructions

Step 1

Gather all the ingredients for your delicious Korean melon and chive salad. Washing and patting them dry will make the cooking process much smoother.

Cut the fresh chives into lengths of about 3-4 cm (approximately 1.5 inches). The aromatic quality of chives will beautifully complement the melon.

Wash the Korean melon thoroughly under running water. Do not peel it. Trim off the ends, then cut the melon in half lengthwise. Use a spoon to scoop out and discard the seeds and the pith (the spongy part where the seeds are attached). This step helps prevent the salad from becoming too watery.

Cut the prepared Korean melon into pieces similar in length to the chives, about 3-4 cm (1.5 inches). Slice them so they retain a pleasant crispness.

Now, let’s make the dressing. In a bowl, combine 0.5 Tbsp soy sauce, 1.5 Tbsp gochugaru, 0.5 Tbsp corn syrup (or rice syrup), 0.5 Tbsp minced garlic, 1 Tbsp vinegar, and a pinch of sesame seeds.

Adjust the dressing to your taste. You can add more sweetener, vinegar, or gochugaru if you prefer. If you like it spicier, feel free to add a little extra chili flakes.
