‘Potato Spam Jjigae’ is a representative traditional dish from the Chungcheong Province, simmered down with potatoes, spam, and plenty of vegetables. Its sweet and spicy seasoning is perfect for mixing with rice, making it a magical dish that completes a meal without any other side dishes. Main Ingredients- 2 medium potatoes
- 1/2 stalk green onion
- 1/2 to 1 onion
- 1 to 2 Cheongyang chili peppers
Seasoning Ingredients- 1/2 Tbsp sugar
- 2 Tbsp red pepper powder
- 1 Tbsp minced garlic
- 4 Tbsp soy sauce
- 1/2 Tbsp doenjang (soybean paste)
- 1 Tbsp gochujang (red chili paste)
- 1/2 Tbsp sugar

Cooking Instructions
Step 1
First, prepare all the ingredients needed to make this delicious Potato Spam Jjigae. Using two medium-sized potatoes will yield a suitable amount.

Peel the potatoes and cut them into bite-sized pieces (about 2cm). Slice the onion into thick shreds, similar in size to the potatoes, or chop them roughly. Slice the Cheongyang chili peppers and green onions diagonally.

To add Spam’s unique savory flavor to the jjigae, place the Spam in a clean plastic bag and gently mash it with your hands. This helps the Spam meld beautifully with the seasonings for a deeper taste.

Now, let’s make the seasoning sauce that will determine the jjigae’s flavor! In a bowl, combine 1/2 Tbsp sugar, 2 Tbsp red pepper powder, 1 Tbsp minced garlic, 4 Tbsp soy sauce, 1/2 Tbsp doenjang, and 1 Tbsp gochujang. Mix well with a spoon to create the seasoning paste.

Prepare a deep pot or wok. Add the sliced potatoes, mashed Spam, and roughly chopped onions. Evenly drizzle the delicious seasoning paste you just made over the ingredients.

Pour in 700cc of water (about 3.5 cups by measuring cup, or about 4.5 cups by a paper cup). Gently stir with a spatula to combine the seasoning with the ingredients.

Cook over high heat with the lid off for about 10 minutes. Wait until the ingredients start to cook and the broth begins to simmer.
Step 8
After 10 minutes, reduce the heat to medium. Add the diagonally sliced green onions and Cheongyang chili peppers, and simmer for another 5-7 minutes. You can adjust the amount of broth to your preference. If you prefer it more concentrated like a ‘jjajang’, boil it longer until the broth reduces significantly. If you prefer a soupier consistency, turn off the heat at your desired thickness. (Tip: For an extra umami boost, if you are not sensitive to MSG, you can add a very small amount of MSG for enhanced flavor.)
