I was inspired by the super simple stir-fried ramen recipe that Lee Hwi-jae made for his wife on the TV show ‘The Taste of Wife.’ While the basic version with no added ingredients looked delicious, I wanted to make my solo meals a bit more special lately. So, I decided to add chewy rice cakes and tender crab sticks! The result was a surprisingly gourmet and satisfying stir-fried ramen made with simple ingredients. The delightful combination of chewy rice cakes and soft crab sticks, along with the crisp chives and silky egg, creates a rich and complex flavor. Main Ingredients

  • 1 serving Ramen noodles
  • 1 and 2/3 cups water (approx. 330ml)
  • 1 King Crab stick
  • A small handful of chives
  • 1 Egg

Seasoning

  • 4/5 packet Ramen soup base (use only about 80%)

Cooking Instructions

Step 1

In a deep wok or pot, add 1 and 2/3 cups of water and bring to a boil over high heat. While the water is boiling, prepare the other ingredients.

Step 2

If you are using pre-softened rice cakes, lightly rinse them under cold water to enhance their chewy texture, then cut them into bite-sized pieces. (You can use rice cakes for soup or tteokbokki. If the rice cakes are very hard, soaking them in water beforehand is recommended.)

Step 3

Take the King Crab stick out of its packaging and gently shred it by hand along the grain into manageable pieces. Avoid shredding them too finely, as this can reduce the satisfying chewiness. Aim for pieces about 2-3 cm long.

Step 4

Wash the fresh chives thoroughly, pat them dry, and cut them into long pieces. Cutting them about 5 cm long will ensure they blend well with the ramen.

Step 5

Once the water is rapidly boiling, add the prepared rice cakes and cook for about 2-3 minutes until they become soft and tender. The broth will thicken slightly as the rice cakes cook.

Step 6

When the rice cakes are partially cooked, add the ramen noodles, King Crab stick, and 4/5 of the ramen soup base. Stir well to dissolve the soup base. Using only 4/5 of the soup base prevents the dish from becoming too salty, ensuring a balanced flavor.

Step 7

After mixing the ingredients well, crack the egg into the center. Gently break the yolk with chopsticks and then stir the noodles as they cook, ensuring they don’t stick together. (If you prefer your noodles less soft, cook for about 3 minutes.)

Step 8

When the noodles are cooked to your liking, add the prepared chives. Immediately turn off the heat and stir gently for about 10 seconds using the residual heat from the pot. This will lightly cook the chives, preserving their fresh aroma and crispness. Be careful not to overcook them, or they will lose their satisfying crunch.

Step 9

Transfer the finished stir-fried ramen to a serving bowl. Enjoy your steaming hot and delicious stir-fried ramen!
