Crispy and Sweet Bread Rusks
Transforming Leftover Bread Crusts into Delicious Rusks Alongside Rice Bread Rolls
Introducing a recipe for hearty bread rolls filled with rice, and crispy, sweet rusks made from leftover bread crusts. These are perfect finger foods for children’s snacks or for enjoying with coffee.
Rice Bread Roll Ingredients- 1 bowl of cooked rice
- 4 slices of bread
- 2 strips of imitation crab meat
- 4 slices of processed cheese
- 1/2 onion
- 1/4 carrot
- 1/3 zucchini
- 1 Tbsp mayonnaise
- Pinch of salt
- Pinch of black pepper
- 1 Tbsp cooking oil
Rusks Ingredients- Approx. 16 bread crusts
- 1 Tbsp butter
- 1 Tbsp sugar
- Pinch of cinnamon powder
- Approx. 16 bread crusts

Cooking Instructions
Step 1
First, let’s prepare the filling for the bread rolls. Finely chop the onion, carrot, and zucchini after washing them thoroughly. Season the chopped vegetables with a pinch of salt and pepper. Heat 1 Tbsp of cooking oil in a pan over medium heat and sauté the vegetables until they become translucent. Once the vegetables are cooked, add 1 bowl of cooked rice and stir with a spatula, breaking up the rice grains, until well combined with the vegetables.
Step 2
After the vegetables and rice are well cooked and mixed, transfer the mixture to a bowl. Shred 2 strips of imitation crab meat, which have been lightly blanched in hot water until tender, and add them to the bowl. Mix everything together with 1 Tbsp of mayonnaise until well combined. You now have a moist and savory rice salad filling.
Step 3
Now it’s time to prepare the bread. Carefully trim off the crusts from 4 slices of bread using a knife. Set these crusts aside for now; they will soon be transformed into delicious rusks!

Using a rolling pin or an empty glass bottle, gently flatten the bread slices from which the crusts have been removed. Make them as thin and flat as possible. This will make them easier to roll later and improve their texture.
Step 5
Place 4 slices of processed cheese, one on each flattened bread slice. The cheese will melt and help bind the filling and bread together.
Step 6
Lay out a sheet of plastic wrap or parchment paper. Place a cheese-topped bread slice on top. Then, generously spread the prepared rice salad filling onto one end of the bread. Make sure to add enough rice mixture for a satisfying bite.
Step 7
Using the plastic wrap or parchment paper, help roll the bread tightly over the filling. If you don’t have wrap or paper, it’s still manageable, but using them will make shaping and slicing much easier. (Tip: If your parchment paper is large enough, you can join two bread slices side-by-side to make a longer roll!)

Once rolled tightly, cut the bread rolls into bite-sized pieces (about 2-3 cm thick). Your delicious bread rolls are now complete! They look appealing and are filling enough to be a great lunchbox option for kids.
Step 9
Now, let’s make rusks with those reserved bread crusts. Place 1 Tbsp of butter and 1 Tbsp of sugar in a microwave-safe bowl. Microwave for about 30 seconds to 1 minute until the butter and sugar are completely melted and combined into a smooth sauce.
Step 10
Using a brush, thoroughly coat the bread crusts with the melted butter and sugar mixture. Ensure all sides are well-coated for maximum crispiness and flavor. Arrange the coated crusts side-by-side on a baking sheet.
Step 11
Bake in a preheated oven at 180°C (350°F) for about 10 minutes, or until golden brown. Baking time may vary slightly depending on your oven. They should be crispy on the outside with a slightly chewy interior.

Once baked, lightly sprinkle cinnamon powder over the rusks for an added aromatic touch. They are delicious as is, but cinnamon enhances their flavor beautifully. Enjoy them with a warm cup of coffee or tea!
