Ingredients

  • Garlic scapes, about 1 bundle (approx. 200-250g)
  • Salt, 1 pinch
  • Soy sauce, 2.5 Tbsp
  • Oligosaccharide (or corn syrup), 1.5 Tbsp
  • Soju, 2 Tbsp (or mirin)
  • Sesame oil, 1 Tbsp
  • Toasted sesame seeds, a sprinkle

Cooking Instructions

First, thoroughly wash the garlic scapes under running water. Trim off the tough ends of each scape. Then, cut them into bite-sized pieces, about 5-6 cm long. (For more detailed tips on preparing garlic scapes and other recipes, please refer to recipe @6974199).

Heat a generous amount of cooking oil in a wide pan over medium heat. Add the prepared garlic scapes and stir-fry. The key here is to cook them just until they are slightly tender but still retain some crispness. Add a pinch of salt to lightly season the garlic scapes as they cook.

Once the garlic scapes have slightly wilted and you can feel their crispness, pour in 2.5 tablespoons of soy sauce into the pan. Continue to stir-fry, ensuring the soy sauce coats the garlic scapes evenly.

Add 1.5 tablespoons of oligosaccharide (or corn syrup). Then, add 2 tablespoons of soju. If you have mirin, you can use it instead of soju for a deeper flavor. Stir-fry again to combine all the seasonings well.

Now, cover the pan with a lid that fits. Let it simmer gently for about 3-4 minutes, depending on the amount of garlic scapes. I covered mine for about 4 minutes to allow the sauce to fully penetrate the scapes. (If you don’t have a lid that fits perfectly, find one from another pot or pan that works.)

Remove the lid. You’ll see the delicious Baek Jong Won’s Stir-Fried Garlic Scapes, with the sauce well-absorbed. At this stage, taste the dish. If it’s not salty enough for your preference, add a tiny bit more soy sauce to adjust the seasoning. My personal taste found the seasoning perfect as is.

Once the seasoning is to your liking, turn off the heat. Drizzle in 1 tablespoon of sesame oil and sprinkle a generous amount of toasted sesame seeds. Give it one final quick stir, and your Baek Jong Won’s Stir-Fried Garlic Scapes are ready!
