Soft Stir-Fried Zucchini Noodles: A Simple and Delicious Side Dish
Soft Zucchini Noodles Stir-Fry: The Perfect Simple Side Dish
This recipe offers a delightful twist on the classic stir-fried zucchini! Instead of the usual half-moon slices, we’ll julienne the zucchini for an even softer, more tender texture. If you prefer a crispier bite, this might be a different experience, but for those who enjoy a melt-in-your-mouth tenderness, this julienned zucchini stir-fry is a must-try. It’s a simple, quick, and flavorful side dish that comes together with pantry staples. Let’s get cooking!
Main Ingredients- 1 zucchini
- 1/2 onion
- 1/2 red chili pepper
Seasoning & Others- 1 Tbsp fermented salted shrimp (solids preferred)
- 1 Tbsp minced garlic
- 1 Tbsp sesame oil
- 1 Tbsp toasted sesame seeds
- Pinch of salt
- 1 Tbsp fermented salted shrimp (solids preferred)
- 1 Tbsp minced garlic
- 1 Tbsp sesame oil
- 1 Tbsp toasted sesame seeds
- Pinch of salt
Cooking Instructions
Step 1
First, wash the zucchini thoroughly. Cut it in half lengthwise, and then use a spoon to carefully scoop out and discard the seeds. Removing the seeds helps prevent the zucchini from releasing too much water during cooking, resulting in a tastier dish.
Step 2
Julienne the zucchini into bite-sized strips, not too thin so they retain some texture. Place the julienned zucchini in a bowl and add 1 tablespoon of fermented salted shrimp. Gently massage the shrimp into the zucchini. The shrimp provides a savory depth of flavor that enhances the dish. Let it sit for about 5 minutes; the zucchini will release some moisture, making it even more tender.
Step 3
Julienne the half onion similarly to the zucchini. Slice the half red chili pepper thinly (after removing seeds) to add a pop of color to the dish.
Step 4
Heat a lightly oiled pan over medium heat. Add the julienned onion and stir-fry until it becomes translucent. Sautéing the onions first builds a sweet aromatic base for the zucchini.
Step 5
Once the onions are slightly softened, pour the liquid from the salted shrimp and zucchini mixture into the pan. Stir-fry over high heat for a moment. Cooking this liquid first helps to seal in the zucchini’s moisture while infusing it with flavor. Then, add the julienned zucchini to the pan and stir-fry quickly over high heat until it just becomes tender and slightly translucent. Be careful not to overcook, or it might become mushy.
Step 6
Finally, add the sliced red chili pepper, 1 tablespoon of minced garlic, 1 tablespoon of sesame oil, and 1 tablespoon of toasted sesame seeds. Stir everything together gently until well combined. Your delicious stir-fried zucchini noodles are ready! You can adjust the seasoning with a pinch of salt if needed. This dish is perfect served over warm rice or packed as a delightful side for your bento box.
