  • 2 steamed corn on the cobs
  • 40g unsalted butter
  • 4 Tbsp steak sauce
  • 2 pinches of salt
  • 2 pinches of black pepper

Cooking Instructions

First, let’s prepare the corn. Trim off about 1cm from the top of the corn cob to create a flat base, which will make it easier to stand and cut. Place the corn upright on its flat base and carefully cut it lengthwise into 4 equal sections, resembling ‘ribs’. If cutting long pieces is challenging, you can first cut the corn in half crosswise, and then cut each half lengthwise into 2 pieces, resulting in 4 pieces in total.

Next, we’ll make the special sauce to coat the corn. In a wide bowl, combine 40g of unsalted butter, 4 tablespoons of steak sauce, 2 pinches of salt, and 2 pinches of black pepper. Mix these ingredients well. Then, microwave the mixture for about 20-30 seconds, just until the butter is melted and everything is combined into a smooth sauce. Be careful not to overheat.

Now it’s time to coat the corn with the sauce and begin the first bake. Using a brush, generously apply the special sauce you just made onto all sides of the corn pieces. Ensuring an even coating is key for maximum flavor. Arrange the sauced corn pieces in a single layer on an air fryer basket or baking sheet. Cook in a preheated oven or air fryer at 180°C (350°F) for about 10 minutes. This initial bake helps the corn soften and absorb the sauce’s delicious flavors.

After the first bake, carefully remove the corn from the oven or air fryer. Apply another generous layer of the special sauce to each piece. This second coating will intensify the flavor and create a richer glaze. Return the corn to the oven or air fryer and continue baking at 180°C (350°F) for another 5 minutes, or until the edges are beautifully golden brown and slightly caramelized. Keep an eye on them to prevent burning.

Finally, let’s add the finishing touches. Sprinkle your desired amount of Parmesan cheese powder over the golden-brown corn ribs. This adds a delightful cheesy and salty dimension. Next, add a sprinkle of lamb skewer seasoning (including cumin powder) for an aromatic, slightly exotic twist.
