  • 2-3 bay leaves
  • 1/2 tsp whole black peppercorns

Flavorful Marinade

  • 350ml water
  • 2 Tbsp sugar
  • 4 Tbsp soy sauce
  • 1 Tbsp plum extract (maesilcheong)
  • 2 Tbsp corn syrup or rice syrup
  • 2 Tbsp cooking wine (mirin or cheongju)
  • 1 Tbsp sesame oil
  • 2 Tbsp minced garlic (approx. 2 cloves)
  • 5 whole garlic cloves

Cooking Instructions

Step 1

First, prepare 600g of pork ribs for the dish. This generous portion is perfect for the whole family to enjoy.

Step 1

Step 2

Soak the pork ribs, which have been trimmed by the butcher, in cold water for about 30 minutes to 1 hour to remove any blood. Removing the blood is crucial for a clean taste and delicious ribs stew without any gamey odor.

Step 2

Step 3

In a pot, add enough water to cover the ribs. Add the bay leaves and whole black peppercorns. Once the water comes to a boil, add the pork ribs and blanch them for about 5-7 minutes. This step helps to remove impurities and any unwanted smell from the ribs.

Step 3

Step 4

After blanching, rinse the ribs thoroughly under cold running water to wash away any surface fat or remaining blood. Place the clean ribs nicely in a wok or a deep pot.

Step 4

Step 5

The key to a delicious ribs stew is the marinade! In a bowl, combine 350ml of water with 2 Tbsp sugar, 4 Tbsp soy sauce, 1 Tbsp plum extract, 2 Tbsp corn syrup, 2 Tbsp cooking wine, 1 Tbsp sesame oil, and 2 Tbsp minced garlic. Stir well until all ingredients are dissolved to create a flavorful marinade.

Step 5

Step 6

Pour the prepared marinade evenly over the pork ribs in the wok or pot. Mix everything gently to ensure the ribs are well-coated with the sauce.

Step 6

Step 7

Optional: Add sliced green onions and 5 whole garlic cloves for extra flavor. The green onions add aroma, and the whole garlic cloves will become tender as they cook, making them delicious to eat alongside the ribs. (Green onions can be omitted if preferred.)

Step 7

Step 8

Cover the pot and bring to a boil over high heat for about 30 minutes. Once boiling, reduce the heat to medium-low and let it simmer gently for another 20-30 minutes, or until the sauce has reduced and the ribs are tender. Spooning some of the sauce over the ribs occasionally will keep them moist and flavorful.

Step 8

Step 9

Finally, garnish with finely chopped scallions and a generous sprinkle of sesame seeds for a beautiful finish! You’ve now created a stunning, glossy pork ribs stew that looks as good as it tastes. This recipe is truly a gem that you won’t regret trying. Highly recommended!
