A Unique and Delicious Recipe: Minari and Cucumber Water Kimchi Cold Noodles
After months of staying home due to the virus, I’ve been diligently cooking at home instead of dining out. While I’m getting used to home-cooked meals, I sometimes find myself craving food from outside. To continue practicing social distancing, I chose to make another home-cooked meal today. I decided to make cold noodles using the minari and cucumber water kimchi I made yesterday. I used the water kimchi before it was fully fermented because I was really craving cold noodles, but it still turned out delicious! Main Ingredients- 2 servings of cold noodle (naengmyeon) noodles
- 1 cup (approx. 250ml) of minari and cucumber water kimchi
- 1 packet (approx. 200ml) of store-bought cold noodle broth
- 1 hard-boiled egg
- A pinch of sesame seeds
Cooking Instructions
Step 1
Gently rub the cold noodle strands under cold running water to separate them. This helps prevent sticking and results in a chewier texture.
Step 2
In a large bowl, combine the minari and cucumber water kimchi with the store-bought cold noodle broth. Stir well. Taste and adjust the seasoning with a little vinegar or salt, according to your preference. You can add more vinegar for a tangier flavor or salt to enhance the overall taste.
Step 3
Cut the hard-boiled egg in half. This makes it easier to eat and adds a nice visual appeal as a topping.
Step 4
Bring a pot of water to a boil. Add the cold noodles and cook for about 30-40 seconds, or according to package instructions. Drain immediately to prevent overcooking.
Step 5
Rinse the drained noodles under cold running water, gently massaging them a few times to remove excess starch. This step makes the noodles more resilient and springy. Drain thoroughly in a colander.
Step 6
Place the drained noodles into your serving bowl. Pour the prepared broth and water kimchi mixture over the noodles.
