Today’s recipe is a deliciously spicy stir-fried beef. The beef is so tender and incredibly tasty, bursting with spicy and savory flavors. It makes a fantastic main side dish, or you can serve it over rice for a delightful beef rice bowl. It’s perfect as a side for rice or pairs wonderfully with a cold drink.

Main Ingredients

  • Beef (Chuck eye roll recommended) 317g
  • Peperoncino 3 pcs (or spicy dried chili peppers to taste)
  • 1 Tbsp minced garlic
  • 1/4 Onion
  • Scallions, chopped, for garnish
  • Vegetable oil, a little

Cooking Instructions

First, wash and peel the 1/4 onion, then thinly slice it into strips suitable for stir-frying. Chop the scallions finely for garnish.

For the beef, we’re using chuck eye roll, about 317g. Lightly pat it dry to remove excess moisture, then slice it into bite-sized pieces, considering the texture you enjoy. Avoid slicing it too thick, as it might not absorb the sauce well, but also not too thin to maintain a good bite.

Now, let’s prepare the key to this delicious stir-fried beef: the sauce. In a bowl, combine 2 Tbsp soy sauce, 2 Tbsp sugar, and 2 Tbsp cooking wine. Add 1 Tbsp chicken stock (or 50ml water if chicken stock is unavailable) and 50ml water. Finally, add 1 Tbsp cornstarch. Whisk everything together with a whisk or spoon until well combined and no lumps of cornstarch remain. Finish with a pinch of black pepper. Your sauce is ready.

Heat a lightly oiled frying pan over medium-high heat. Add the sliced beef and sprinkle with black pepper to reduce any gamey smell. Stir-fry the beef quickly until it’s no longer pink on the surface. Be careful not to overcook it, as this will make it tough. Once the pinkness disappears, immediately remove the beef from the pan and set it aside to cool. This step helps maintain the beef’s tenderness.

In the same frying pan, add a little more oil if needed. Add the sliced onion and 1 Tbsp minced garlic. Tear the 3 peperoncino chilies (or your chosen spicy dried chilies) and add them to the pan. Stir-fry over medium heat until the onions become translucent and slightly softened, releasing their fragrant aroma.

Once the onions are translucent, give the prepared sauce a quick stir to re-dissolve any settled cornstarch, then pour it all into the frying pan. Bring the sauce to a gentle simmer over medium-low heat, stirring constantly until it thickens slightly and coats the ingredients.

When the sauce has thickened and reduced slightly, return the pre-cooked beef to the pan. Since the beef is already cooked, stir-fry for about 30 seconds on medium-high heat, just enough to coat the beef evenly with the sauce and allow the flavors to meld. Avoid prolonged cooking to prevent the beef from becoming tough again.
