Tofu Cracker Ingredients

  • 100g Tofu (water removed)
  • 150g Cake Flour
  • 45g Sugar
  • 3g Salt
  • 1 Egg
  • Sesame Seeds (to taste)

Cooking Instructions

First, in a bowl, combine 45g of sugar and 1 egg. Whisk them together until the sugar has dissolved and the mixture becomes lighter in color. Dissolving the sugar completely is key to achieving a tender cracker texture rather than a hard one.

It’s crucial to remove as much moisture as possible from the 100g of tofu. Use paper towels or a clean cloth to thoroughly pat the tofu dry. Excess water can make the dough too wet, leading to difficulties in shaping.

Mash the dried tofu until it’s very smooth and lump-free. You can use a fork or a potato masher for this. Smoothly mashed tofu is the foundation for a tender dough.

Add the mashed tofu to the sugar and egg mixture prepared earlier. Gently mix them together with a spatula or your hands until well combined. The key is to ensure the tofu and batter are evenly incorporated.

Now, sift 150g of cake flour into the dough. Sifting the flour helps prevent lumps and results in a smoother dough, making the crackers crispier.

After adding the flour, add 3g of salt for seasoning. Gently knead the mixture until it forms a cohesive dough. Be careful not to over-knead, as this can make the crackers tough.

Once the dough starts to come together, stir in sesame seeds to your liking. Mix again lightly to ensure they are evenly distributed. The nutty flavor of the sesame seeds will greatly enhance the taste of the tofu crackers.

Shape the dough into a flat disc, wrap it tightly in plastic wrap or place it in a plastic bag, and refrigerate for about 30 minutes. Chilling the dough makes it much easier to roll out and shape.
