Introducing a refreshing and spicy Kimchi Soup recipe that’s incredibly easy to make with aged kimchi and a common noodle soup powder. You don’t need any complex ingredients; just the kimchi itself creates a deep and clean broth. Instead of traditional soy sauce or fish sauce, using the noodle soup powder adds a wonderful umami flavor while simplifying the process. A touch of MSG can enhance the taste further. It’s perfect for enjoying with rice, as a late-night snack, or as a hangover cure!

Main Ingredients

  • Well-fermented Kimchi 400g
  • Kimchi Brine 3 ladles (approx. 150ml)
  • Minced Garlic 1 Tbsp (15g)
  • Green Onion 1/2 stalk (approx. 50g)
  • Black Pepper 1 tsp (2g)
  • Concentrated Broth Cubes (or Anchovy-Kelp Broth) 2 cubes (20g)
  • Instant Noodle Soup Powder 2 Tbsp (20g)
  • Water 1L

Cooking Instructions

Finely chop the kimchi into bite-sized pieces (about 1-1.5cm), including the vegetables like cabbage, green onions, and radish. Place the chopped kimchi, 2 concentrated broth cubes, 1 Tbsp of minced garlic, and the roughly chopped 1/2 green onion into a pot.

Add 3 ladles of kimchi brine to the pot. Sprinkle 1 tsp of black pepper evenly over the ingredients. If you don’t have enough kimchi brine, you can substitute with plain cold water.

Pour in 1L of water and bring to a boil over high heat. The kimchi brine and noodle soup powder usually provide sufficient seasoning. Once it boils, reduce the heat to medium and simmer gently for 10-15 minutes to allow the kimchi flavor to fully infuse the broth. If the soup tastes too bland, add a little more noodle soup powder or about 1/2 Tbsp of tuna fish sauce to adjust the seasoning. (Anchovy or soy sauce might overpower the kimchi’s natural flavor, so tuna fish sauce or the noodle soup powder is recommended).
