Hello everyone! Today, I’ve prepared a special and simple dish that will surely impress your family. As someone who frequently uses Baek Jong-won’s recipes, I found this pork cutlet donburi to be incredibly satisfying. My family also really enjoyed this dish, perhaps because it’s a bit different from our usual meals. It’s easy enough to make on a weekend, so give it a try!

Main Ingredients

  • 2 pieces of store-bought pork cutlet (tonkatsu)
  • 1/2 large onion, thinly sliced
  • 4 fresh eggs
  • 1 handful of green onions, chopped
  • Cooking oil (enough to deep-fry the pork cutlet)

Donburi Sauce

  • 3 Tbsp soy sauce
  • 2 Tbsp sugar
  • 3 Tbsp mirin (sweet rice wine)
  • 9 Tbsp water

Cooking Instructions

Preheat the oil for frying: In a deep frying pan or pot, add enough cooking oil for the pork cutlet to be submerged. Heat the oil over high heat. To check if the oil is ready, drop a tiny bit of flour into it; it should sizzle and float up within 3 seconds.

Fry the pork cutlet: Once the oil is preheated, reduce the heat to medium-low. Carefully place the 2 pork cutlets into the oil. Fry them for about 7 minutes, flipping them occasionally, until they are golden brown and crispy. Controlling the heat is key to ensure the inside cooks through without burning the outside.

Drain the fried pork cutlet: Transfer the golden-brown fried pork cutlets to a wire rack or a plate lined with paper towels. Let them drain well to remove excess oil. This step is important for a less greasy and more enjoyable final dish.

Prepare the donburi sauce: In a small bowl, combine 3 Tbsp soy sauce, 3 Tbsp mirin, 2 Tbsp sugar, and 9 Tbsp water. Whisk everything together until well combined. This is the golden ratio from Baek Jong-won’s recipe!

Simmer the sauce and sauté onions: Pour the prepared sauce into a clean frying pan and heat over high heat. Once the sauce begins to bubble (after about 10 seconds), add the half sliced onion. Sauté the onions for about 1 minute, or until they become slightly translucent. Be careful not to overcook the onions; they should retain a slight bite.

Add pork cutlet, green onions, and eggs to finish: Place the fried pork cutlets over the sautéed onions. Sprinkle a handful of chopped green onions evenly over the top. Finally, pour the whisked eggs (from 4 eggs) over everything. Do NOT stir. Let it simmer gently for about 1 to 2 minutes until the eggs are softly set. A slightly runny yolk is perfect!
