Grandma’s Taste! Instant Noodle Bibim Guksu
Simple Bibim Guksu Recipe (Using Instant Noodles)
Taste just like your grandma used to make at home! Inspired by the recipe from popular YouTuber Grandma Park Mak-rae, this dish uses chewy instant noodles to create a delicious bibim guksu quickly and easily. The perfect harmony of sweet, sour, and spicy sauce with crunchy vegetables is exceptional.
Main Ingredients- 1 serving instant noodle packet
- 1/4 onion
- 1 handful rinsed and chopped aged kimchi
- 1/3 cucumber
- A little chopped green onion
Sauce Ingredients- 1.5 Tbsp soy sauce
- 1 Tbsp sugar
- 1 Tbsp sesame oil
- 1 Tbsp minced garlic
- 0.5 Tbsp vinegar
- Generous amount of sesame seeds
- 0.5 tsp salt
- 1 Tbsp gochugaru (Korean chili flakes)
- 1.5 Tbsp soy sauce
- 1 Tbsp sugar
- 1 Tbsp sesame oil
- 1 Tbsp minced garlic
- 0.5 Tbsp vinegar
- Generous amount of sesame seeds
- 0.5 tsp salt
- 1 Tbsp gochugaru (Korean chili flakes)
Cooking Instructions
Step 1
Bring a generous amount of water to a rolling boil in a pot. Once boiling, add the instant noodle packet and cook for about 30 seconds to 1 minute longer than the package instructions for a chewier texture. (Tip: If you like, you can also thinly slice and blanch vegetables like carrots or zucchini in the boiling water. Today, we’ll skip this.)
Step 2
While the noodles are cooking, it’s time to make the sauce. In a large bowl, combine 1.5 Tbsp soy sauce, 1 Tbsp gochugaru, 1 Tbsp minced garlic, 1 Tbsp sesame oil, 0.5 Tbsp vinegar, a little chopped green onion, a generous amount of sesame seeds, 0.5 tsp salt, and 1 Tbsp sugar. Mix well to create the sauce.
Step 3
Drain the cooked instant noodles and rinse them thoroughly under cold running water to cool them down. This will make the noodles even more springy and firm.
Step 4
Prepare the vegetables. Finely chop the aged kimchi. Thinly slice the 1/4 onion and the 1/3 cucumber (you can use a vegetable peeler to create ribbons if you prefer). Add all the prepared vegetables to the bowl with the sauce made in step 2.
Step 5
Add the cooled noodles and the prepared vegetables to the sauce bowl. Gently mix everything together to coat evenly with the sauce.
Step 6
It’s much easier and tastier to mix with your hands than with a spoon! Grab the noodles with your hands and gently toss them up and down, ensuring the sauce coats every strand thoroughly. (Tip: Using a spoon might cause the sauce to clump or not mix evenly.)
Step 7
Delicious instant noodle bibim guksu is ready! You won’t be able to stop after one bite. Enjoy this simple yet incredibly flavorful meal.
