Cooking Instructions
Step 1
First, prepare the ham and onions. Slice the ham into approximately 1cm thick, bite-sized pieces. Slice the onions to a similar thickness. In a bowl, combine the ham and onions. Sprinkle with dried basil, garlic powder, olive oil, salt, and finely ground black pepper. Mix well to coat everything for the marinade. This will enhance the natural flavors and add a subtle aroma. Let it marinate for about 10 minutes to allow the flavors to meld.
Step 2
Next, prepare the fresh greens. Gently wash the radish sprouts and chicory under running water. Lightly shake off the excess water or pat them dry with a paper towel. Excess moisture can dilute the flavors, so ensure they are reasonably dry. Set them aside, ready for plating.
Step 3
Now, let’s make the delicious steak sauce. In a saucepan, combine the soy sauce, dashi broth, sake, mirin, and sugar. Bring the mixture to a simmer over medium heat. Once simmering, reduce the heat to low and let it reduce until it’s about two-thirds of its original volume. In a small bowl, mix the cornstarch with 2 tablespoons of water until smooth. Gradually whisk this cornstarch slurry into the simmering sauce. Continue stirring until the sauce thickens to a glossy, desirable consistency. Adjust the amount of slurry as needed.
Step 4
All preparations are complete! Heat a pan or grill over medium-high heat. Add the marinated ham and onions and grill until nicely browned and slightly caramelized on both sides. You’ll see a beautiful color on the ham and smell the sweet aroma of the onions. Arrange the grilled ham and onions attractively on a serving plate. Garnish with the prepared fresh radish sprouts and chicory. Finally, generously drizzle the warm steak sauce over the dish. Your impressive ‘Ham and Onion Steak’ is ready! Its beautiful presentation and fantastic taste are sure to delight everyone at the table.
