Main Ingredients

  • 1/2 fresh sea eel
  • 3 Tbsp cooking oil
  • 1 pack sweet and savory teriyaki sauce
  • 1 bowl warm cooked rice

Cooking Instructions

Step 1

First, make an incision along the bone of the fresh sea eel and gently scrape to remove the slimy mucus. Then, rinse the eel thoroughly under running water, turning it over to clean both sides.

Pat the cleaned eel completely dry with kitchen towels. It’s important to remove as much moisture as possible, as remaining water can cause oil splattering or uneven cooking.

Heat 3 tablespoons of cooking oil in a pan over medium heat. Place the prepared sea eel in the pan and grill for 4 minutes on each side, for a total of 8 minutes, until nicely browned. Ensure the eel is cooked through and develops a mouthwatering color.

Once the eel is partially cooked, brush both sides evenly with the teriyaki sauce. Reduce the heat to ‘low’ to prevent the sauce from burning, and continue to cook for another 2 minutes, turning every minute, until the sauce coats the eel beautifully and looks glossy.

Gently mix the remaining teriyaki sauce into the warm rice. (You can add soy sauce or sesame oil to taste.) Place the seasoned rice in a bowl, and top it with the perfectly grilled eel, cut into serving pieces. Your delicious eel donburi is ready!
