I made gochujang on January 1st and it needed to age for 2 weeks. Finally, it’s time to taste it! My heart is beating fast~ haha. I made a spring cabbage salad with gochujang.

Ingredients

  • 2 heads of spring cabbage

Seasoning

  • 1.5 Tbsp gochujang (Korean chili paste)
  • 1 tsp salt
  • 1/2 Tbsp sesame oil
  • 1/2 Tbsp sesame seeds

Cooking Instructions

I brought this spring cabbage to make a fresh kimchi, but some leaves looked a bit wilted, so I decided to quickly blanch it and make a gochujang salad instead. First, bring a pot of water to a rolling boil. Once boiling, carefully add the cleaned spring cabbage heads and blanch them briefly.

Blanch the cabbage for a very short time, just about 30 seconds. Overcooking will make it mushy, so be mindful of the timing to keep it crisp.

Immediately after blanching, rinse the spring cabbage under cold running water. This rapid cooling helps retain its crunchy texture. Squeeze out as much excess water as possible.

Once drained, cut the spring cabbage into bite-sized pieces. Aim for pieces about 4-5 cm long; this size is easy to mix and eat.

In a large bowl, combine the prepared spring cabbage with 1.5 Tbsp of your homemade gochujang, 1 tsp of salt, 1/2 Tbsp of sesame oil, and 1/2 Tbsp of toasted sesame seeds for added nutty flavor. Look at the beautiful color of my homemade gochujang! It’s not too spicy or too salty, just perfect, making this salad incredibly appealing. This taste is a complete hit for my palate! Yes, I’m the kind of person who makes her own gochujang!

Now, gently mix everything together with your hands, ensuring the dressing coats the spring cabbage evenly. Be careful not to mash the cabbage; mix with a light touch. Once everything is well combined, your delicious spring cabbage gochujang salad is ready to enjoy!
