Ingredients

  • 5 eggs
  • 10 whole garlic cloves
  • 13 Korean green chili peppers (kkotgochu)
  • 1 cup soy marinated crab broth
  • 1/2 cup water
  • 1 Tbsp cooking wine (mirin or cheongju)
  • 2 Tbsp corn syrup (mulyeot)
  • A pinch of sesame seeds

Cooking Instructions

Step 1

First, take the eggs out of the refrigerator and let them sit at room temperature for at least 30 minutes. This helps prevent them from cracking when boiled due to the sudden temperature change.

In a pot, add enough cold water to cover the eggs and 1 Tbsp of coarse sea salt. To ensure the eggshells peel smoothly, gently roll the eggs in your hands before boiling, creating tiny cracks on the shell. Boil for 15 minutes. Immediately after boiling, plunge the eggs into cold water to cool them down. This step also helps make the shells easier to peel.

Rinse the Korean green chili peppers (kkotgochu) thoroughly under running water. It’s best to leave the stems on during washing and remove them afterward. Washing with the stems removed can lead to the loss of nutrients.

To help the braising liquid penetrate, prick the boiled eggs all over with a fork or toothpick. You can also make a small slit on the green chili peppers to allow the flavors to seep in better.

Peel the whole garlic cloves and wash them clean. Trim off any tough ends or stems.

Now, let’s make the braising liquid. In a pot, combine the soy marinated crab broth, water, and cooking wine. Bring the mixture to a boil. Once boiling, add the boiled eggs and simmer over medium-low heat until the eggs are evenly colored. When the eggs start to take on color, add the whole garlic cloves to cook together.

As the garlic cooks and infuses its flavor, add the green chili peppers and cook until tender. Finally, stir in the corn syrup to give the braised eggs a glossy sheen. This adds a beautiful shine. Once all ingredients are well combined and flavors have melded, turn off the heat and garnish with a sprinkle of sesame seeds.
