- Minced garlic, 1 Tbsp
- Gochugaru (Korean chili powder), 1 Tbsp
- Cooking wine (mirin or cheongju), 1 Tbsp
- Black pepper, a pinch
Cooking Instructions
Step 1
First, marinate the pork shoulder cut for stew by mixing it with 1 Tbsp of cooking wine and a pinch of black pepper. Let it sit for about 10 minutes. This step helps to remove any gamey odors from the pork and makes it more tender.
Step 2
Chop the kimchi into bite-sized pieces. If the pieces are too large, the broth might not be fully absorbed, so cutting them into manageable sizes is recommended.
Step 3
Heat a pot with a little cooking oil. Add the marinated pork and chopped kimchi, then stir-fry them until well combined. Sautéing until the pork is cooked on the surface is crucial to bring out the flavors of the kimchi and pork.
Step 4
Once the kimchi and pork are somewhat cooked, reduce the heat slightly and add 1 Tbsp of gochujang. Be careful not to burn the gochujang by frying it immediately after adding it.
Step 5
Next, add 1 Tbsp of minced garlic and 1 Tbsp of gochugaru. Mix everything thoroughly and stir-fry for about 1-2 minutes to allow the seasonings to coat the ingredients well.
Step 6
Pour about two mugfuls of water (approximately 400ml) into the pot with the ingredients. Bring it to a boil over high heat and simmer for 15 minutes. The key to a delicious stew is to simmer it long enough for the sourness of the kimchi and the umami of the pork to infuse into the broth.
Step 7
After 15 minutes, taste the broth and adjust the seasoning with soy sauce or salt if needed. Finally, add the chopped green onions and simmer for another moment. Your delicious pork kimchi stew is ready!
Step 8
This simply prepared pork kimchi stew boasts a wonderfully spicy and clean flavor. It’s so good, you’ll want to finish a whole bowl of rice with it! Discover more culinary information at [https://seunmi1981.tistory.com](https://seunmi1981.tistory.com).
