Essential Ingredients

  • 100g unsalted butter, softened at room temperature
  • 27g powdered sugar (icing sugar)
  • 50g finely ground almond flour
  • 85g cake flour (low-gluten flour)
  • 40g cornstarch
  • 1g salt (a tiny pinch)
  • 100g powdered sugar (for coating)
  • 10g freeze-dried strawberry powder (for color and flavor)

In a clean bowl, place the softened unsalted butter. Using a rubber spatula, cream the butter until it reaches a smooth, creamy consistency. Gently mix without overbeating.

Add the sifted 27g of powdered sugar and 1g of salt to the butter in the bowl. Mix lightly until well combined with the butter, taking care not to let the powders fly around.

Sift the 50g almond flour, 85g cake flour, and 40g cornstarch into the bowl with the butter mixture. Using a rubber spatula, gently cut and fold the dry ingredients into the wet until just combined and a dough forms. Be careful not to overmix, as this can make the cookies tough.

Once the dough comes together, wrap it tightly in plastic wrap. Refrigerate for 1 hour to let the dough rest and firm up. This step makes the dough much easier to shape.

Remove the chilled dough from the refrigerator. Divide it into portions of about 10g each. Roll each portion between your palms to form small, perfectly round balls. Ensuring the cookies are uniformly sized will help them bake evenly and look beautiful.

Line a baking sheet with parchment paper. Place the rolled dough balls onto the prepared baking sheet, leaving some space between each cookie. Bake in a preheated oven at 160°C (320°F) for 13 to 15 minutes, or until the edges are lightly golden. Baking time may vary slightly depending on your oven.

Once baked, carefully remove the cookies from the oven and let them cool on a wire rack for a few minutes until they are still warm to the touch but not hot.
